Rice Pie Grandma Madelyn

Grandma Mad made her rice pies smaller than Grandma Ann. She had a recipe for pie crust but used to use the ready made pie shells you can buy from the store in a pie tin. I use the pie crust recipe that she had listed.

Ingredients

  • For Crust::
  • 1 lb Ricotta
  • 1/2 pint heavy cream
  • 2/3 cup uncooked rice, cook as package directs
  • 4 eggs
  • 2 tsps vanilla
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 tsp baking powder
  • 1/3 cup sugar
  • 1 1/2 cups flour
  • 1 tsp vanilla
  • Dash salt.
  • Mix together and roll out. Place in pie plate and roll the edges to make a design.
