Rice Pie Grandma Madelyn

Grandma Mad made her rice pies smaller than Grandma Ann. She had a recipe for pie crust but used to use the ready made pie shells you can buy from the store in a pie tin. I use the pie crust recipe that she had listed.

Ingredients
- For Crust::
- 1 lb Ricotta
- 1/2 pint heavy cream
- 2/3 cup uncooked rice, cook as package directs
- 4 eggs
- 2 tsps vanilla
- 1 cup sugar
- 2 eggs
- 1 1/2 tsp baking powder
- 1/3 cup sugar
- 1 1/2 cups flour
- 1 tsp vanilla
- Dash salt.
- Mix together and roll out. Place in pie plate and roll the edges to make a design.

Mix all pie ingredients together, pour into an unbaked pie shell.
