Ingredients
- Cookie Dough:
- l cup butter
- l/3 cup whipping cream
- 2 cups all purpose flour
- granulated sugar
- Filling:
- l/4 cup soft butter
- 3/4 cup powdered sugar
- l teaspoon vanilla
- few drops red or green food coloring
Preparation
Step 1
To make cookie:
Combine butter, cream and flour thoroughly. Chill l hour.
Roll dough l/8" thick on a floured pastry cloth. Cut with a round l l/2" cookie cutter.
Transfer cut circles to a wax paper sheet that is heavily coated with sugar. Turn each cookie to coat both sides. Place on a ungreased cookie sheet. Bale 7 to 9 minutes or until slightly puffy. Cool on racks.
To make filling :
Cream butter, sugar and vanilla till well mixed. If desired, tint pink or green with food coloring. Put the filling on one flat side of the cooled cookie and top with another flat side of a cookie.
Makes about 60 cookies.
