Pappardelle with Spinach & Feta

Ingredients
- 3/4 lb pappardelle
- 2 lbs spinach, washed but not dried
- 2 T olive oil
- 3 cloves thinly sliced garlic
- Pinch of crushed red pepper
- Sea salt
- 2 oz. crumbled feta, (1/2C)
- 2 T chopped parsley

Preparation
Step 1
Cook pappardelle til al dente. Drain, reserving 1/4C cooking liquid
Meanwhile, in large skillet, cook spinach over hi heat, stirring until wilted, @ 1 min. Drain spinach in colander set over bowl & press gently. reserve the liquid. Coarsely chop spinach.
Wipe out skillet & add olive oil & garlic. Cook over mod. heat, sitrring, til garlic is lightly browned. Add crushed pepper & cook 30 sec. Add spinach & generous pinch of salt & cook, stirring til hot, @ 1 min.
Add pasta to skillet along with reserved liquids & season with salt. cook til liquid has nearly evaporated & spinach is silky. Sprinkle with crumbled feta cheese.
