Ingredients
- 1 1/2 tablespoons chicken broth, regular
- 1 1/2 tablespoons Dijon mustard
- 1 tablespoon extra-virgin olive oil
- 4 grams PGX granules
- 3 ounces broiled boneless, skinless chicken breasts, chopped
- 1/2 cup chopped celery
- 1/3 cup peeled, chopped sweet apples
- 1/2 C halved red grapes
- 1/3 cup golden raisin
- 1 tablespoon capers, drained (optional)
- salt
- ground black pepper to taste
Preparation
Step 1
1.In a medium bowl, mix together the broth, mustard, oil, and PGX granules. Let stand for about 5 minutes to thicken.
2.Add the chicken, celery, apples, and capers (if using). Toss until well combined. Season with salt and pepper. Chill before serving.
