Flank Steak with Yogurt Chipotle Spread

Ingredients

  • sauce:
  • 1 lb flank steak (trimmed)
  • 1/4 tsp each salt, pepper, ground cumin
  • 1 head garlic
  • 1 tsp olive oil
  • 1 c greek yogurt
  • 1/2 c chopped cilantro
  • 1/4 c chopped green onion
  • 1 tbsp chipotle pepper finely minced
  • 1 tsp paprika
  • 1 tsp sugar
  • 1 tsp lime zest & juice
  • 1/4 tsp salt
  • pinch ground cumin

Preparation

Step 1

Prepare grill. Sprinkle both sides of steak with seasoning. Grill 5 minutes per side or until desired degree of doneness; let stand 5 minutes. Slice into 1/4-inch-thick strips.

1. Sauce: cut top off garlic head; drizzle with oil & wrap in foil Roat @ 350F until soft (1 hr). Let cool then squeeze flesh into bowl.
2. Stir in yogurt, and other ingredients.
3. Sprinkle steak with spices Grill over medium heat turning once about 8 minutes per side. SHould be medium rare.
4. Transfer steak to cutting board & slice thinly on diagonal to meat grain. Serve with sauce.
