Blueberry French Toast Casserole

Ingredients

  • 1 lb of French bread or Italian loaf cut into 1" cubes
  • 8 oz cream cheese; diced
  • 1 cup of frozen blueberries
  • 12 eggs
  • 1 1/2 cups of milk
  • 1/2 cup of maple syrup

Preparation

Step 1

Spray 9" X 13" pan with non-stick cooking spray
Place half of bread in the pan
Sprinkle cream cheese on top of the bread cubes
Top with 1 cup of blue berries and remaining bread

In a large bowl, beat eggs, milk and syrup together.
Pour mixture into casserole over bread

Cover pan and refrigerate overnight

Remove pan from refrigerator 30 minutes before baking.

Cover pan with aluminum foil and bake in 350 degree oven for 30 minutes.

Uncover the pan and bake for an additional 30 minutes until the top is golden brown and the eggs have set.
