Ingredients
- 2 Mahi Mahi fillets, thawed
- 3 Tbsp soy sauce
- 1 clove garlic, crushed
- 3 Tbsp balsamic vinegar
- 3 tsp olive oil
- 3 Tbsp honey
- 1 tsp grated ginger root
- Salt & pepper to taste
- Excellent served with steamed jasmine rice and warm bok choy.
Preparation
Step 1
In shallow glass baking dish, stir together honey, soy sauce, balsamic vinegar, ginger, garlic and 2 tsp olive oil.
Season fillets with salt and pepper and place in glass baking dish.
Cover, refrigerate for 20 minutes to marinate.
Heat 1 tsp olive oil in a large skillet over medium/high heat.
Remove fish from baking dish and save marinade.
In skillet, saute fish 4-6 minutes on each side. Turn once. Remove fillets and keep warm.
Pour marinade into skillet and bring to a boil to thicken to a glaze.
Spoon over fish and serve.
