Perfect Cake Mix Cupcakes

Ingredients

  • 1 box (18.25 ounces) cake mix (French vanilla, devil's food, or yellow)
  • 1 cup buttermilk (in place of water called for on box)
  • Vegetable oil (amount on box)
  • 4 large eggs (in place of number called for on box)

Preparation

Step 1

Preheat over to 350 degrees. Line 24 muffin cups with paper liners.

Follow box instructions, putting all ingredients in large bow and using buttermilk in place of water specified (box will call for more water than amount of buttermilk that you are using), using amount of vegetable oil that is called for (typically, white or yellow cakes call for 1/3 cup/ chocolate cakes usually call for 1/2 cup), and adding eggs. Beat with electric mixer until moistened, about 30 seconds. Increase speed to high and beat until thick, 2 minutes longer.

Pour into muffin pans lined with cupcake liners 2/3 full. Bake until golden and toothpick inserted in center comes out clean, 10-12 minutes. Remve from pans, place on wire and allow to cool completely.
