Ingredients

  • 2 cups sugar
  • 4 eggs
  • 3 Cups self rising flour
  • 1 teaspoon vanilla
  • 1 1/2 Cups cooking oil
  • 3 Cups grated carrots
  • 2 teaspoons cinnamon
  • 1 Cup pecans

Preparation

Step 1

Combine all ingredients & bake in 3 – 9” greased and floured pans for 35 to 40 minutes at 350

Frosting
3 small packages cream cheese
1 stick butter
1 box XXXX sugar
1 teaspoon vanilla
Enough milk to make smooth & spreadable

Cream butter and cream cheese. Add a little sugar at a time then add vanilla. Add milk if necessary.
