- Pour one 8- or 12-ounce bag of plain (popped) popcorn into baking dish. Combine in medium-size saucepan:
- Spray a 9-by-13 inch baking dish and preheat oven to 250 degrees.
- 1 stick margarine
- 3 tablespoons butter
- 1 cup brown sugar
- 1/4 cup white corn syrup
- 1/2 teaspoon vanilla
Bring mixture to a boil and continue to boil for two (2) minutes – No longer. Add ½ teaspoon baking soda and stir well. Pour mixture over popcorn and mix well. Bake for one hour, stirring every 15 minutes. Remove from oven, spread on a cookie sheet covered with waxed paper and allow to cool; as it cools, separate pieces. Let cool before eating.
This is so good, and has fewer calories than regul caramel corn. You will enjoy it, I promise.
