Fresh Fruit Salsa With Cinnamon Chips

Ingredients

  • Salsa:
  • 2 tablespoons brown sugar
  • 1 teaspoon grated lime peel
  • 2 tablespoon fresh lime juice
  • 1 teaspoon grated orange peel
  • 2 tablespoon fresh orange juice
  • 1 tablespoon honey
  • 1/4 teaspoon ground cinnamon
  • 2 cups fresh diced pineapple
  • 2 medium diced firm bananas (about 1 1/2 cups)
  • 1 cup diced strawberries
  • 1 cup blueberries
  • 2 medium peeled, diced kiwi (about 3/4 cup)
  • 1 large orange, coarsely chopped sections (about 1/2 cup)
  • Chips:
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 20 wonton wrappers, each cut in half diagonally
  • cooking spray, butter-flavored

Preparation

Recipe Tip:
Chill Salsa 1 to 4 hours

Salsa Preparation:
1. Combine first 7 ingredients in a small bowl; stir well.

2. Combine pineapple and next 5 ingredients in a large bowl. Add dressing, tossing gently to coat. Cover and chill 1 to 4 hours. Serve with Cinnamon Chips.

Yield: 8 servings (serving size: 3/4 cup salsa and about 5 chips).

Cinnamon Chips:
1. Preheat oven to 375°.

2. Combine sugar and cinnamon in a medium bowl; stir well.

3. Coat both sides of won ton wrappers with cooking spray, and dredge in cinnamon-sugar. Arrange won ton wrappers in a single layer on baking sheets coated with cooking spray. Bake at 375° for 9 minutes or until crisp and golden.

Yield: 40 chips.
