Ingredients

  • Baked:
  • 4-6 oz fillet
  • water
  • butter
  • salt
  • pepper
  • Poached:
  • 2 lbs Cod
  • 1 tsp salt
  • 1 bay leaf
  • Few slices of onion
  • 1 slice lemon
  • 1/2 cup dry white wine
  • Flour
  • Water

Preparation

Step 1

Baked:
Place serving portions in a shallow buttered baking dish.
Sprinkle with salt and pepper.
Cover and bake in 325 degree oven till fish flakes easily with fork (20-30 minutes).
DO NOT OVERCOOK!

Serve with drawn butter or cream sauce.

Poached:
For 2 lbs. cod, add just enough water in skillet or pan to barely cover. Add 1 tsp. salt, 1 bay leaf, a few slices of onion, 1 slice of lemon and 1/2 cup dry white wine.
Bring to a boil; cover, and simmer until fish flakes with fork (10-12 minutes).
Remove carefully with slotted spoon.
For a cream sauce, add cream to broth and thicken with a little flour and water.
