Armenian Rice Pilaf

Ingredients

  • Required:
  • 1/4 cup butter
  • 1 1/2 cup uncooked rice
  • 3 cups chicken, beef or veg broth (beef is my favorite!)
  • Optional:
  • sautéed mushrooms or canned
  • sautéed onions and/or carrots and/or celery or dried soup vegetables.

Preparation

Step 1

Heat oven to 400'

If you are adding fresh vegetables, sauté them briefly in butter and/or olive oil.

Heat broth. Add salt and pepper to season. Don't be shy! If using canned mushrooms and/or dried vegetables, add them to the hot broth.

Melt butter in heavy skillet or dutch oven or casserole dish (needs lid).
Add rice and stir frequently until butter is bubbling.
Add sautéed veg if adding
Add hot, seasoned broth and stir.
Cover tightly and bake in 400' oven for 30 minutes.
Remove cover and stir rice carefully to mix the addins back in. (They float to the top during cooking.)
Bake 10 minutes longer to develop a nice crust on top.
