Ingredients

  • 1 whole chicken
  • 2 tblsp. fresh sage, chopped
  • 2 cloves garlic, chopped
  • 4 tblsp. margarine, room temperature
  • 1 tsp. kosher salt
  • 2 c. pomegranate juice
  • 1 tsp. pepper
  • pomegranate seeds
  • vegetables

Preparation

Step 1

Preheat oven to 425.
Bake 1 1/2 hours + 10 minutes.

1. Combine the sage, garlic, margarine & salt in a small bowl.
2. Rub the chicken with margarine mixture under the skin, over the skin & in the cavity.
3. Place the chicken in a roasting pan & add any vegetables you want around the chicken.
4. Drizzle the vegetables with olive oil, salt & pepper.
5. While the chicken is roasting place the pomegranate juice in a saucepan. Add pepper.
6. Bring to a boil.
7. Reduce heat to medium & simmer until juice has reduced by 3/4 & formed a syrup, about 15 minutes.
8. Remove the chicken from the oven & pour half the glaze over the chicken.
9. Return the chicken to the oven for 10 more minutes.
10. Allow the chicken to rest for 10 minutes before carving.
11. After chicken is on the platter spoon the rest of the glaze over the chicken.
12. Garnish platter with pomegranate seeds.
