Ingredients

  • 1 lb. Ground Chicken
  • 20 Thai Basil leaves, chopped
  • 6-8 bulbs garlic, finely chopped
  • 1 sping onion, finely chopped
  • 1 Tbl chili paste
  • 2 Tbl fish sauce
  • Wonton wrappers
  • Dipping Sauce
  • 1/4 cup lime juice
  • 1/4 cup fish sauce
  • 1/4 cup water
  • 2 tsp rice wine vinegar or mirin
  • 1 Tbl sugar
  • 1 small clove garlic, minced
  • 1 small chili, minced

Preparation

Step 1

1. Combine the chicken, basil leaves, garlic, spring onion, sake, salt and chili paste. Mix thoroughly.
2. Have a small bowl of fresh water at your work surface. Place a wonton wrapper on your work surface. Dip your fingers in the water, and wet the edges of the wrapper.
3. Place a tablespoon of filling in the center of the wrapper, and gather the edges of the wrapper around the filling. Store on parchment paper or an oiled pan.
4. Steam dumplings over simmering water or chicken stock on a well-oiled steam tray. Steam until filling is cooked through, about 10 minutes.
