Fresh Apple Cake with Caramel Sauce (MRS)

Wrapped in a cheesecloth, this cake will keep moist in the refrigerator for up to six weeks.
Makes one 9 by 13-inch cake

Ingredients

  • Caramel sauce:
  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla
  • 3 cups peeled, cored and grate apples (about 4 apples)
  • 1 cup sweetened flaked coconut
  • 1 cup chopped pecans
  • 1 cup raisins
  • 4 tablespoons butter
  • 2 tablespoons milk
  • 1/2 cup plus 1 tablespoon icing sugar

Preparation

Step 1

Preheat the oven to 350. Grease and flour a 9 by 13-inch baking dish.

In a bowl, combine the oil, sugar, and eggs and stir well. Sift the flour, baking soda, and cinnamon together into the egg mixture. Stir in the vanilla, apples, coconut, nuts, and raisins.

Pour the batter into the prepared dish. Bake for 50 minutes, until a tester inserted into the center comes out clean.

To make the sauce, combine the butter, milk and sugar in a saucepan over medium heat. Bring to a boil and keep hot. The consistency will remain thin.

Remove the cake from the oven and pour the hot sauce over it. Transfer the cake in the pan to a wire rack and allow to cool. Cut into squares to serve.
