Juicy Roasted Turkey Breast

This was so, so yummy :) This would make great meat for cold snacking the next day or sandwiches :)

Ingredients

  • 1 (4 lb) bone-in, skin-on turkey breast
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 cup chicken broth

Preparation

Step 1

Preheat oven to 325. Place turkey breast, skin side up, on rack in large roasting pan. In small bowl, combine butter, salt, thyme, onion powder, garlic powder, and pepper and mix well.

Loosen skin from turkey and rub half of the butter mixture on the flesh; smooth skin back over turkey and hold in place with a toothpick. Rub remaining butter mixture over turkey. Pour 1 cup broth into bottom of roasting pan.

Roast turkey for 1 1/2 hours, basting occasionally with pan juices, until the roast registers 160 degrees on an instant read thermometer. Cover and let stand 10 minutes, then carve to serve.

NOTE: This seemed to take forever to cook in my oven - allow for plenty of time so we aren't eating at 8:00 again :)
