- 1 large bunch broccoli rabe

Carefully rinse the broccoli rabe in several changes of clean, cold water. Cut off the tough, stringy stems.
In a large pot of boiling water, cook the broccoli rabe for about 5 minutes. This will help reduce the bitterness. Using a large strainer, drain it and allow it to cool. When it's cool enough to handle, you may opt to cut the broccoli rabe into 2-inch-long pieces. However, some people prefer to leave it intact.
In a large frying pan, heat the olive oil. Add the garlic and cook over medium heat until golden. Add the drained broccoli rabe and saute, stirring often, for 5 minutes. Serve immediately.
