Ingredients
- 4 Egg white
- 1 1/4 Cup brewed espresso or very strong coffee
- 1/2 Cup Kahlua liqueur or stong coffee
- 2 Tbs Canola oil
- 1 Tbs Vanilla
- 1 1/2 Cups Prune puree
- 2 Cups Whole-Wheat pastry flour or unbleached flour
- 1 1/2 Cups Sugar
- 1 Cup Unsweetened cocoa powder
- 1/2 Cup Packed brown sugar
- 2 Tsp Baking soda
- 1 Tsp Baking poweder
- 1/4 Tsp Salt
Preparation
Step 1
In medium bowl, lightly whisk egg whites, whisk in espresso or coffee, Kahlua or coffee, oil, and vanilla. Add prune puree and mix well.
In large bowl combine flour, sugar, cocoa powder, brown sugar, baking soda, baking powder and salt. Mix well.
Make a well in the flour mixture and pour in the coffee mixture. Stir ingredients together. Pour into pepared pan.
Coat 12 cup bundt pane with non-stick spray
Preheat oven: 350 Degrees
Test with toothpick - should be moist but not wet. Cool 15 minutes on wire rack. Remove from pan and plac eon rack until fully cooled
