Heavenly Chocolate Cheesecake

Ingredients

  • Crust:
  • 2 cups vanilla wafer crumbs
  • 1 cup ground toasted almonds
  • 1/2 cup butter, melted
  • 1/2 cup sugar
  • Cake:
  • 12 ounces milk chocolate chips
  • 1/2 cup milk
  • 1 envelope unflavored gelatin
  • 16 ounces cream cheese, softened
  • Topping:
  • 1/2 cup sour cream
  • 1/2 teaspoon almond extract
  • 1/2 cup heavy cream, whipped

Preparation

Step 1

Crust:
1. In large bowl, combine vanilla wafer crumbs, almonds, butter and sugar; mix well.
2. Pat firmly into a 9" springform pan, covering bottom of 2-1/2" up the sides; set aside.

Cake:
3. Melt chocolate chips over hot, not boiling, water; stir until smooth; set aside.
4. Pour milk into small saucepan; sprinkle gelatin on top; set aside for 1 minute.
5. Cook over low heat, stirring constantly until gelatin dissolves; set aside.
6. In large bowl, combine cream cheese, sour cream and melted chocolate chips; beat until fluffy.
7. Beat in gelatin mixture and almond extract.
8. Fold in whipped cream.
9. Pour into prepared pan; chill until firm (about 3 hours).
10. Run knife around edge of cake to separate from pan; remove rim.
11. Garnish with whipped cream and chocolate shavings.
