Festive Irish Cream Cheesecake

Ingredients

  • Crust:
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup margarine, melted
  • Cake:
  • 1 envelope unflavored gelatin
  • 1/2 cup cold water
  • 3 eggs, separated
  • 1 cup sugar
  • 16 ounces cream cheese
  • 2 tablespoons cocoa
  • 2 tablespoons bourbon
  • 1 cup whipping cream, whipped

Preparation

Step 1

Crust:
1. Combine crumbs, sugar and melted butter.
2. Press into bottom and 2" up the side of a 9" springform pan.

Cake:
3. Soften gelatin in cold water; stir over low heat until dissolved.
4. Beat egg yolks, blend in dissolved gelatin with 3/4 cup sugar. for 3 minutes.
5. Cook stirring constantly, over low heat
6. Combine cream cheese, bourbon and cocoa, mixing at medium speed until well blended.
7. Blend in gelatin mixture.
8. Chill mixture until thickened, but not set.
9. Beat egg whites until foamy.
10. Gradually add remaining sugar; beat until stiff peaks form.
11. Fold egg whites and whipped cream into cream cheese mixture.
12. Pour over crust; chill until firm.
