Creamed Turkey on Biscuits (MRS)

Ingredients

  • 3 cups cubed turkey
  • 4 cups turkey broth
  • 1 cup frozen corn, thawed
  • 1/2 cup frozen peas, thawed
  • 1/2 cup diced carrots
  • 1/4 cup minced onion
  • 1/4 cup minced celery
  • 3 tablespoons flour
  • 3 tablespoons water
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 hard-boiled eggs, chopped
  • 8 hot buttermilk biscuits

Preparation

Step 1

Combine the turkey, broth, corn, peas, carrots, onion, and celery in a large saucepan and bring to a boil over medium high heat. Decrease the heat to low and simmer for 15 minutes. Stir the flour and water together in a small bowl to make a smooth paste. Stir the paste into the turkey mixture and cook, stirring constantly, for 5 minutes, until thickened. Stir in the salt, pepper and eggs.

Split the biscuits in half and place 2 halves on each plate. Spoon the turkey and sauce over the biscuits and serve at once.
