Butterscotch Pie (MRS)

  • 3 egg yolks
  • 1 cup packed brown sugar
  • 1/4 cup cornstarch
  • 1/2 to 3/4 cup cold water
  • 3 cups milk
  • 1 tablespoon butter
  • 2 teaspoons vanilla
  • 1/2 recipe pie pastry

Preheat the oven to 325.

In a small bowl, stir together the egg yolks, brown sugar, cornstarch and enough water to make a smooth paste.

Place the milk in the top of a double boiler set over simmering water. When the milk begins to steam, slowly whisk in the egg mixture. Cook, stirring occasionally, for about 4 minutes, until thickened. Remove from the heat and stir in the butter and vanilla.

Pour the filling into the crust and bake for about 30 minutes, until golden brown. Transfer to a wire rack to cool. Serve at room temperature or chilled.
