Almond & dried cranberry salad with a poppy seed vinaigrette dressing

Ingredients

  • Salad:
  • 2 heads Romaine &/or Nappa Cabbage
  • 1 bunch Green Onion [greens & whites]
  • 2 packages Ramen Noodles chopped [discard powder]
  • 1 package sliced or chopped Almonds
  • 1-2 cups Dried Cranberries
  • Dressing:
  • 3/4 cup Sugar
  • 1 tbsp Poppy Seed
  • 1 tbsp Ground Mustard
  • 1/3 cup Rice Wine Vinegar or Apple Vinegar
  • 1 cup Vegetable Oil
  • Pinch of Salt and Pepper

Preparation

Step 1

Mix dressing the night before and leave covered on counter top
When making the dressing make sure to whisk together all ingredients except vegetable oil. When mixed, slowly add in 1 cup vegetable oil while whisking.

Chop Romaine/Nappa Cabbage, green onions and Ramen noodles
Mix together with sliced almonds and dried cranberries

Mix in dressing and serve
