  • 2 c cake flour (or you may substitute 1 3/4 c all-purpose flour)
  • 1/8 t salt
  • 8 T (1/2 c or 1 stick) cold margarine

Preparation

Step 1

Mix flour and salt in medium bowl. Using a pastry blender or two table knives, cut chilled margarine into the flour and salt mixture is powdery and pale yellow, about 3 1/2 minutes. Sprinkle water over the mixtureand gently toss with fork until flour is moistened and mixture is crumbly. Do not form a ball. On a sheet of heavy-duty plastic wrap, gently press dough in a four-inch circle. Pill ends up to cover dough and refrigerator, unwrap and leave dought in center of plastic wrap.
