Ingredients
- 1/3 cup peanut butter
- 1/2 cup icing sugar
- 1/2 recipe pie pastry
- 1/3 cup flour
- 1/2 cup plus 2 tablespoons sugar
- 1/8 teaspoon salt
- 2 cups milk
- 2 egg yolks, lightly beaten
- 2 teaspoon butter
- 1 teaspoon vanilla
- 1 cup heavy whipping cream
Preparation
Step 1
In a bowl, combine the peanut butter and icing sugar and stir well. Reserve ¼ cup and spread the rest in the bottom of the crust.
In a saucepan, combine the flour, the ½ cup sugar, salt, milk, and egg yolks over high heat. Bring to a boil and cook, stirring constantly, for 5 minutes, until thickened. Remove from the heat and stir in the butter and vanilla. Pour the filling into the crust and set aside to cool.
Combine the cream and the 2 tablespoons sugar in a bowl and whip until soft peaks form. Spread the whipped cream over the filling. Sprinkle the reserved peanut butter mixture over the top. Serve at room temperature or chilled.
