Ingredients

  • 1 14 oz can black beans (organic are best), drained & rinsed
  • 2 Small Tomatoes, seeded & chopped
  • 1 Small Red Onion, diced
  • 1/2 cup frozen corn, thawed OR can of Niblets, drained
  • 1 Green Pepper, seeded & chopped
  • 1/4 cup fresh cilantro, chopped (more if you like cilantro)
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 cup vegetable oil
  • 2 Tbsp red wine vinegar
  • 1/2 tsp salt
  • 1/2 tsp fresh ground pepper
  • 1 jalapeno pepper, seeded & chopped (optional)
