Peppermint Meltaways

Ingredients

  • Cookies:
  • 1/2 cup 10x sugar
  • 1 cup butter, softened
  • 1/2 tsp peppermint extract
  • 1 1/4 cups flour
  • 1/2 cup cornstarch
  • Glaze:
  • 1 1/2 cups 10x sugar
  • 2 TB butter, softened
  • 1-2 TB milk
  • 1/4 tsp peppermint extract
  • 2-3 drops red food coloring
  • crushed candy canes

Preparation

Step 1

In large mixer bowl, combine sugar, butter and extract. Beat at medium speed until well mixed. Reduce speed to low; add flour and cornstarch. Beat until well mixed. Cover; refrigerate until firm (30-60 minutes.)

Heat oven to 350. Shape rounded teaspoonfuls of dough into 1" balls. Place 2 inches apart on parchment lined baking sheets. Bake 12-15 minutes or until edges are lightly browned. Let stand 1 minute; remove from baking sheet. Cool completely.

Note: if dough is very firm you will end up with ball shaped cookies. If not, the cookies will spread a little.

For glaze; in small bowl, combine sugar, butter and extract. Gradually add enough milk for desired consistency. Stir in food coloring. Drizzle over cookies. Immediately sprinkle with crushed candy.
