Ingredients
- 1 box Stove Top stuffing
- 1 stick oleo, melted and mixed with the stuffing
- 1 c. grated onion (use about 1/3 c.)
- 1 c. grated carrots
- 5 c. grated zucchini.
- 1 c. sour cream
- 1 can cream of chicken or mushroom soup
- Cheddar cheese

Step 1
Mix sour cream with soup. Put 1/2 of stuffing in the bottom of a 9 x 13 baking dish. Mix togehter zucchini, carrots and onion. Spread on top of the stuffing. Spread sour cream mixture over the vegetables. Mix the remaining stuffing with the cheddar cheese and top the casserole. Bake for 1 hour at 350 degrees.
