Corn, Checken and Cheddar Soup

Ingredients

  • 1 c. diced red bell pepper
  • 1 (14 oz.) can fat free chicken broth
  • 1 (14.75 oz.) can cream-style corn
  • 1 c. frozen whole-kernel corn
  • 1/4 t. black pepper
  • 2 c. chopped cooked chicken breast
  • 1/2 c. (2 oz.) reduced fat shredded sharp cheddar cheese

Preparation

Step 1

Heat a Dutch oven over medium-high heat. Coat panwith cooking spray. Add bell pepper, cook 3 minutes stirring frequently. Stir in broth, cream style corn, frozen corn, and peper. Bring to a boil, stir in chicken. Cover, reduce heat, and simmer 5 minutes.

Ladle soup into bowls and sprinkle with cheese.
