SALMON*****Fennel-Flavoured Salmon Salad

This was excellent for both. Dan cleaned his plate - great make-ahead for hot weather.

Ingredients

  • 2 servings
  • 1 can Cloverleaf salmon, drained
  • 1/4 cup finely minced fennel
  • 1/4 cup finely minced onion
  • 1 small carrot, minced
  • 1 cup navy beans, rinsed and drained
  • 2 tbsp. lemon juice
  • 2 tbsp. Hellmann's Light
  • 1 tsp. dried tarragon or chopped fresh dill
  • salt and pepper

Preparation

Step 1

* Combine dressing ingredients and mix well. Stir in remaining ingredients and refrigerate until serving time.

* Serve mine on a bed of arugula, Dan's on some lettuce.
