SALMON*****Fennel-Flavoured Salmon Salad

This was excellent for both. Dan cleaned his plate - great make-ahead for hot weather.

Ingredients
- 2 servings
- 1 can Cloverleaf salmon, drained
- 1/4 cup finely minced fennel
- 1/4 cup finely minced onion
- 1 small carrot, minced
- 1 cup navy beans, rinsed and drained
- 2 tbsp. lemon juice
- 2 tbsp. Hellmann's Light
- 1 tsp. dried tarragon or chopped fresh dill
- salt and pepper
Preparation
Step 1
* Combine dressing ingredients and mix well. Stir in remaining ingredients and refrigerate until serving time.
* Serve mine on a bed of arugula, Dan's on some lettuce.
