Ingredients

  • 1 pound fava beans
  • 3 large onions, chopped
  • 2 tablespoons olive oil
  • Crushed red pepper,to taste
  • 1 teaspoon salt
  • 2 tablespoons chopped fresh parsley
  • 1 bay leaf
  • 1/4 teaspoon allspice
  • 1/4 teaspoon cinnamon
  • 1 cup vinegar
  • 1 (29-ounce) can tomato sauce

Preparation

Step 1

Soak the fava beans in water for 3 days, changing the water every day. On the fourth day, drain the beans and put them in a large stockpot. Cover the beans with fresh salted water. Bring to a boil. Reduce heat to simmer. Cook until tender. Do not drain.
While the fava beans are cooking, make the sauce. In a large frying pan, saute the chopped onions in the olive oil until tender. Add the remaining ingredients. Mix well. Simmer 30 minutes.
Add the sauce to the stockpot containing the cooked fava beans. Simmer for 3 hours. If the sauce is too thick, add water. Taste and adjust seasonings to your liking.
