Sweet Onion Soup (MRS)

Ingredients

  • 2 tablespoons olive oil or vegetable oil
  • 12 cups sliced sweet onions (about 12)
  • 2 cloves garlic, chopped
  • 1/4 cup dry white wine
  • 1 1/2 to 2 quarts chicken broth or vegetable broth
  • 1 cup heavy whipping cream
  • 2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme

Preparation

Step 1

Heat the oil in a large, heavy pot over medium heat. Add the onions and garlic and cook, stirring frequently, for about 10 minutes, until the onions are very soft but not browned. Pour in the wine and scrape the bottom of the pan with a spatula to loosen any browned bits. When the wine evaporates, stir in 1 ½ quarts of the stock and simmer for 15 minutes, until the onions begin to break down and blend with the stock.

Working in small batches, transfer the soup to a blender and puree until smooth, adding more stock if needed. Pour the puree into a clean pot and keep warm over medium heat. Stir in the cream, salt, pepper and thyme and serve hot.
