Ingredients
- 1/2 recipe pie pastry
- 2 eggs, lightly beaten
- 1 cup sugar
- 1 tablespoon butter, melted
- 1 tablespoon flour
- 2 cups thinly sliced rhubarb
Preparation
Step 1
Preheat the oven to 350. Line a 9 inch pie plate with the dough and crimp the edges.
In a bowl, combine the eggs, sugar, butter and flour and stir until well mixed. Stir in the rhubarb. Pour into the pie crust and bake for about 1 hour, until golden brown. Transfer to a wire rack to cool. Serve at room temperature or chilled.
