Spring Panzanella

Ingredients

  • 1 # loaf crusty bread
  • 4 cloves garlic minced
  • 1 shallot minced
  • 1 T fresh thyme leaves
  • couple pinches salt
  • 1/4 cup olive oil
  • 1 bunch asparagus
  • 2 cups peas
  • 4 handfuls of spinach
  • 1/4 cup fresh basil

Preparation

Step 1

-In large bowl toss bread cubes, garlic, shallot, salt and oil.Pour onto baking sheet, bake at 350* for 15mins.
-In a cold skillet, add a splash of oil, splash of water adn a couple pinches of salt.
-Turn up heat, when water starts to simmer add asparagus.
-Cover, wait 20 seconds and add peas.
-Cover, wait a few seconds, add spinach.
-Cover, wait a few seconds until spinach starts to collapse.
-Put bread cubes back into large bowl, pour veggies over bread and toss well.
-Add basil and toss.
-Serve family style.
