Banana Butter Pecan Ice Cream

Ingredients

  • 1 1/2 cups finely chopped pecans
  • 2 Tbs butter melted
  • 1/4 tsp salt
  • 1 1/2 cups brown sugar packed
  • 2 cups whipping cream
  • 6 egg yolks
  • 1/2 cup gran sugar
  • 1 tsp vanilla
  • 3 ripe bananas medium
  • 4 cups shole milk

Step 1

1. Preheat oven to 350* In bowl toss pecans with butter
and salt. Spread in 15x10x1 baking sheet. Bake 8-10 minutes or until toasted, stirring once.
2.In med. saucepan combine brown ugar and 1 1/2
cups of the cream, cook and stir over med heat until sugar is melted. In bowl whisk together yolks and remaining cream, gradually shisk in 3/4 cup of hot brown sugar mixture. Gradually add to mixture in saucepan. Cook and stir over medium heat until bubbles begin to form(190*) Remove from heat. Whisk in granulated sugar and vanilla. Cool 30 minutes. Cover chill 4 to 24 hours.
3. In a bowl mash banana (1 cup) gradually stir in chilled mixture. Pour in a 4-5 qt ice cream freezer along with milk. Freeze according to manufacturers directions.
4. Stir in pecan mixture. ripen at least 4 hrs.
