Ingredients

  • 4 C. bread flour, sifted
  • 1 C. sugar
  • 4 t. baking powder
  • 4 1/2 t. ground cinnamon
  • 4 t. grated nutmeg
  • 3 t. ground ginger
  • 2 t. ground all spice
  • 1 1/2 t. kosher salt
  • 1/2 t. ground cloves
  • 2 eggs
  • 1 1/4 C. sour cream
  • 4 T. unsalted butter, melted
  • Canola oil for forming and frying
  • 2 C. confectioners dugar
  • 1 1/2 t. vanilla extract

Step 1

1. Whisk flour, sugar, baking powder, 3 t. cinnamon, 3 t. nutmeg, ginger, 1 1/2 t. all spice, salt, and cloves in a bowl; set aside. Combine eggs, sour cream, and butter in the bowl of a stand mixer fitted with the paddle attachment; beat until smooth. With the motor running, slowly add the dry indredients and mix until a soft, sticky dough forms.

2. Heat 2 inches of oil in a 6 qt saucepan until temp reaches 325 degrees. Using lightly oiled hands, roll 1/4 C. batter into a loose, sticky ball; pat gently into a disk. With your thumb, make a 1.5 inch hole in the center of the dough, carefully slide into the oil, and fry, flipping once, until puffed and golden, 4-5 minutes. Using a slotted spoon, transfer to a baking sheet with a wire rack; repeat with remaining dough and let donuts completely cool.

3. Whisk remaining cinnamon, nutmeg, allspice, plus confectioners sugar, vanilla, and 1/4 C. water in a bowl until smooth. Dip tops of donuts in glaze and return to wire rack until glaze is set.
