Ingredients
- 1 cup rolled oats
- 1 cup plain flour
- 3/4 cup sugar
- 1 cup unsweetened coconut
- 1 tablespoon golden syrup (honey will work if you have to substitute.)
- 1/2 cup butter
- 1 1/2 teaspoons baking soda
- 2 tablespoons boiling water

Step 1
Preheat oven to 320 degrees.
In a large bowl, combine oats, flour, sugar and coconut and mix well. Melt syrup and butter together in a small saucepan. Mix soda with boiling water and add to melted butter and syrup. Add to dry ingredients and mix well. Place tablespoons of mixture on a greased cookie sheet (biscuit tray in Aussie terms.) Bake for 12 - 15 minutes or until golden brown. Or spread into an 8" x 8" pan and bake for 20 - 25 minutes or until golden brown. Cut before allowing to cool completely.
Note: raisins or other dried fruit can be added to it as well.
