Banana-Nut Bread (MRS)

Makes 1 loaf. For those who don’t like them, raisins can be left out of this recipe and it’s still delicious. Try grilling the bread in a hot skillet, buttered and browned on both sides.

Ingredients

  • 1 1/2 cups flour
  • 3/4 teaspoon baking soda
  • 1/2 cup butter, at room temperature
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup chopped pecans
  • 1/2 cup raisins
  • 3 ripe bananas, mashed

Preparation

Step 1

Preheat the oven to 350. Butter and flour a 9 by 5 by 3 inch loaf pan.

Stir together the flour and baking soda in a bowl. In a separated large bowl, beat together the butter and sugar with an electric mixer. One at a time, add the eggs, beating well after each addition. Gradually mix in the flour mixture. Dust the pecans and raisins with flour and stir into the batter. Stir in the mashed bananas. Scrape the batter into the prepared loaf pan.

Bake for about 50 minutes, until a tester inserted into the center comes out clean. Transfer to wire rack and allow to cool in the pan for 10 minutes. Turn the loaf out of the pan and allow to cool completely. Wrap the loaf in foil and let sit at room temperature for 1 to 2 days before serving. This allows the bread to become more moist. Serve at room temperature.
