Apple Dumplings (MRS)

  • 2/3 cup plus 1/2 cup sugar
  • 1 3/4 teaspoons cinnamon
  • 2 tablespoons plus 2 teaspoons butter
  • 1 1/2 cups water
  • 2 cups flour
  • 1 teaspoon salt
  • 3/4 cup plus 2 tablespoons shortening
  • 1/4 cup ice water
  • 4 large, tart apples, peeled and cored

Preparation

Step 1

Preheat the oven to 375. Butter a 9 by 9-inch baking dish.

Combine the 2/3 cup sugar, ¼ teaspoon of the cinnamon, the 2 tablespoons butter, and the water in a small saucepan over medium high heat. Bring to a boil and cook, stirring constantly, for 3 minutes, until the sauce is slightly thick, like the consistency of maple syrup. Remove from the heat.

Sift the flour and salt together into a large bowl. Add the shortening and ice water. Mix by hand to make a soft dough. Do not knead the dough too much or it will be tough. Divide the dough into 4 equal pieces. Roll our each piece of dough into a 1/8 inch thick and ¼ inch wide square on a lightly floured surface.

Place an apple in the center of each square of dough. In a small bowl, stir together the ½ cup sugar and remaining 1 ½ teaspoons cinnamon. Pour into the apple core holes. Lightly moisten the edges of the pastry with water and fold up the corners over the apples. Pinch the edges of the dough together to seal.

Pour 1 cup of the sauce in the bottom of the prepared baking dish. Stand the apples upright in the dish. Dot the top of each apple with ½ teaspoon of the remaining butter. Bake for 20 minutes. Remove the dish from the oven and pour the remaining sauce over the apples. Return to the oven and bake, basting with the sauce several times, for about 30 minutes, until golden brown. Serve warm.
