Shrimp Stock (CS)

Ingredients

  • 3 cups shrimp shells (from peeled, fresh or frozen shrimp)
  • 1 cup white wine
  • 1 medium Spanish onion, sliced thin
  • 2 stalks celery
  • 2 medium carrots
  • 1 tablespoon tomato paste
  • 2 cloves garlic, smashed
  • 1/2 bunch fresh parsley
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 2 tablespoons whole black peppercorns
  • 1 teaspoon salt

Preparation

Step 1

Bring all ingredients to a boil in a 2 gallon stockpot with 6 cups water. Turn down heat and simmer for 20 minutes. Strain and reserve the liquid for gumbo.
