Ingredients

- 1/2 lb. Butter, at room temperature
- 1 1/2 lbs. Icing or superfine sugar
- 6 eggs, separated (room temperature)
- 1/4 tsp. cream of tartar
- 1/2 tsp. Salt
- 1 tsp. vanilla bean powder or paste
- 1/4 tsp. Ground mace
- 1/4 tsp. Ground allspice
- 1/4 tsp. Ground cloves
- 1/4 tsp. Ground nutmeg
- 1/4 tsp. Ground cardamom
Preparation
Step 1
Beat egg whites until foamy with whisk attachment. Add cream of tartar and beat until soft peaks form. Add about 1/2 cup of the superfine sugar and beat until stiff peaks form. Remove to a bowl and set aside.
Switch to paddle attachment and beat the butter and remaining sugar until smooth. Add the egg yolks one at a time, allowing each egg to blend into the butter mixture before adding the next.
Mix the egg whites into the egg yolk mixture on low speed. Stir in the salt, vanilla, mace, allspice, cloves, nutmeg, and cardamom.
Transfer batter to a covered container that will be easy to scoop it out of and refrigerate.
To use the mix, combine 1/2 ounce each of spiced rum and brandy (not cognac) with 1 cup hot water in a mug. Stir in 1 tablespoon of the Tom and Jerry mixture and mix well until dissolved. Grate some fresh nutmeg over the top, if desired.
