Applesauce Cake (MRS)

  • 1 cup butter, at room temperature
  • 2 cups sugar
  • 2 eggs
  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon mace
  • 2 cups raisins
  • 1 cup chopped pecans
  • 2 cups applesauce

Preparation

Step 1

Preheat the oven to 325. Grease and flour a tube cake pan.

Combine the butter and sugar in a large bowl and beat, using an electric mixer, until light and fluffy. One at a time, add the eggs, beating well after each addition. In a separate bowl, stir together the flour, baking soda, salt, cinnamon, cloves, nutmeg and mace. Add the flour mixture to the butter mixture, mixing until the batter is just combined. Dust the raisins and nuts with flour and fold them into the batter with a rubber spatula.

Heat the applesauce in a small saucepan over medium heat. Stir the hot applesauce into the batter.

Pour the batter into the prepared pan and bake for 55 to 60 minutes, until a tester inserted into the center comes out clean.

Transfer the cake in the pan to a wire rack and allow to cool for 20 minutes. Turn the cake out onto the rack and cool completely.
