Zucchini Cake (D)

Ingredients

  • Cake:
  • 1-1/2 cup oil
  • 3 cups sugar
  • 4 eggs
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 3 cups grated zucchini
  • 1 cup pecans
  • Frosting:
  • 1 pound powdered sugar
  • 1 8-ounce package cream cheese, softened
  • 1 stick margarine, softened
  • 1 teaspoon vanilla

Preparation

Step 1

Cake:

Preheat oven to 350 degrees.

Grease 9 x 13-inch pan.

Beat together oil, sugar, and eggs.

Sift together flour, baking powder, soda, salt, and cinnamon. Add to above mixture and blend.

Add grated zucchini and pecans.

Bake at 350 degrees for 55 minutes.

Frosting:

Beat together cream cheese and margarine. Add in powdered sugar and vanilla; beat until smooth.
