cookie - Quinoa Dark Chocolate Cookies

Ingredients

  • 2 c brown rice flour
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 c unsalted butter, at room temperature
  • 2 eggs
  • 1/2 c stevia brown sugar mix
  • 1 tbsp dark agave nectar
  • 1/2 c vegetable oil
  • 2 tsp vanilla extract
  • 1 c cooked (cooled) quinoa
  • 2 c old fashioned oats
  • 1 c 60% (+) dark chocolate chips

Preparation

Step 1

Preheat your oven to 375 degrees.

In a large mixing bowl or stand mixer, combine the butter, brown
sugar blend and dark agave nectar. Add your eggs and mix to combine.
Add the vegetable oil and mix to combine. Add the salt, cinnamon,
nutmeg and brown rice flour. Add the cooked quinoa, oats and mix
gently. Then add the dark chocolate chips and stir to combine.

Using a tablespoon or medium cookie scoop, scoop the cookies onto a parchment or silpat lined cookie sheet. Bake at 375 for 12-14 minute or until slightly browned. Enjoy!
