Creamy Turkey-Rice Soup (non-dairy)

Ingredients
- 2 Tbsp coconut oil
- 1 onion, chopped
- 1-2 carrots, slice or chopped
- 3-4 garlic cloves, minced
- 6 cups Homemade Turkey Broth
- 1/2 cup brown rice (uncooked)
- 1-2 cups turkey bits (from making broth)
- 1 cup coconut milk
- guar gum or other thickener
- 1 cup frozen green peas
- 2 tsp salt, to taste
- 1/2 tsp pepper, to taste
- Sage or Poultry seasoning, to taste

Preparation
Step 1
1. In large pot, saute onions & carrots in oil. Add minced garlic, then broth.
2. Bring to boil, stir in uncooked rice. Reduce heat to simmer, cover pot.
3. Simmer 30-45 minutes, stirring occasionally, until rice is done.
4. Stir in milk, and thickener if desired (I have guar gum in a shaker and give some generous shakes into the soup.)
5. About 5 minutes before serving add peas, bits of turkey, sage, salt & pepper.
