Cobbler, Pecan

Ingredients

  • 1 Box Pie Crust (2 crusts total)
  • 2 1/2 C Light Corn Syrup
  • 2 1/2 C Sugar
  • 1/2 C Butter, Melted
  • 4 1/2 C Vanilla
  • 6 Eggs
  • 2 C Pecans--Broken into small pieces
  • 2 C Pecans Whole or Halves

Preparation

Step 1

Heat over to 425 degrees.

Grease a 9X13 pan. Fit pie crust to bottom of pan. (Roll it out longways, then turn the edges down to form a side.)

In a large bowl, Mix Everything but pecans. Stir in pecans. Pour HALF on to crust. Top with the other crust and brush with melted butter. Bake for 15 minute or so until crust is brown.

REDUCE oven temp to 350.

Gently pour remaining filling on baked pastry. Top with whole or half pecans. Bake 3 minutes longer. NO MORE. It should set as it cools.

Cool for 20 minutes, then serve.
