Ingredients

  • 1 orange
  • 1/2 cup sugar
  • 1 cup ground dates or raisins
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk

Preparation

Step 1

Squeeze juice of one orange and pour over 1/2 cup sugar. Set aside. Remove most of the pulp from the orange peel and grind with one cup of dates or raisins. Set aside.

Cream shortening with 1 cup sugar. Add eggs and beat 2 minutes.

Sift flour 4 times with the baking powder, soda and salt. Alternate flour mix with buttermilk. Add fruit orange mixture.

Grease 9 x 13 pam. Bake 350 for 40 minutes.

Remove from oven. Pour orange juice/sugar mixture immediately on cake.

Serve with whipped cream
