Ingredients
- 2 H-E-B Fully Cooked® Fully Fit™ Multi-Grain Breaded Chicken Breasts
- 2 H-E-B Fresher Lasting® Jumbo Avocado
- Halves, sliced
- 3 tablespoons H-E-B Extra Virgin Olive Oil
- Juice of one lime
- 1 bag (6 oz.) H-E-B Ready, Fresh, Go!™ Baby Spinach Leaves
- 2 H-E-B Harvest Moon™ Mango Halves or 2
- cups H-E-B Frozen Mango Chunks, thin sliced
- 2 slices H-E-B Ready, Fresh, Go!™ Red Onion Sandwich Slices
Preparation
Step 1
1. Heat chicken according to package directions.
Thinly slice cooked chicken and
set aside.
2. Combine avocado slices, olive oil, and
lime juice in a small bowl and toss
gently to coat. Layer spinach, mango,
and avocado slices coated with dressing,
red onion rings, and chicken in
a large salad bowl. Cover salad with
plastic wrap and refrigerate until ready
to serve.
3. Toss salad before serving and enjoy!
