Cook the turkey at 325 degrees. (Time depends on the weight of the turkey you are using. Add chourico to the turkey cavity at the start of baking.
Add: onion, salt, pepper, some wine, butter, and a dollop or two of ketchup to the pan. Baste the turkey with the mixture occasionally as it cooks.
Cook the remaining chourico in the pan for approximately three hours.
Add potatoes to the pan approximately 1 hour to 45 minutes before the turkey is done.
